Unapologetic Foods is opening Adda in the Fishtown neighborhood this fall, marking the collective’s first significant venture outside New York and signaling a broader shift in how Indian fine dining is expanding beyond the coasts’ traditional geography.
Adda, which takes its name from the Hindi word for a casual gathering place, will anchor the restaurant group’s Philly ambitions. The team has built a reputation for aggressive seasoning, high-heat cooking, and an aesthetic that treats Indian cuisine with the same irreverence and swagger that elevated ramen and Korean food in New York a decade ago. Dhamaka, which opened in the East Village, became a reservation impossible almost immediately, built on a reputation for sharp spicing and the kind of controlled chaos that defines the group’s kitchen philosophy. Semma, their follow-up, doubled down on regional South Indian and Coastal Indian cooking with similar intensity. Both restaurants rejected the safe, Westernized approach that dominated Indian dining for decades, instead leaning into bold flavors and unfamiliar techniques that attracted serious eaters willing to take risks.
